Vitamin C is a water-dissolved vitamin that is necessary for normal growth and maturity. It is required for the fusion of collagen, L-carnitine, and neurotransmitters. It is also involved in protein metabolism. Vitamin C is naturally present in some foods such as citrus fruits and fresh vegetables, and available as a dietary additive. Humans, unlike most animals, are unable to manufacture Vitamin C internally, so it is a crucial nutritional component. Vitamin C is easily destroyed by reactions with oxygen, especially in neutral or alkaline solution or at high temperatures, it makes it hard to preserve in foods.
